Cold Asian Noodle Salad


Ingredients:

  • 1 package Thai rice noodles

  • 1 tsp. sesame oil

  • 2 Tbsp. rice wine vinegar

  • 3 Tbsp. soy sauce

  • 1/2 tsp. crushed red pepper

  • 1 Tbsp. Hoisin sauce

  • 5 Tbsp. olive oil

  • 2 stalks celery, julienned

  • 5 scallions, diced

  • 1/2 cup green cabbage, shredded

  • 1/2 cup red bell pepper, julienned

  • 3 Tbsp. sesame seed, toasted (for garnish)

Preparation:

  1. Prepare noodles according to package instructions. Combine all ingredients in a large bowl and toss until thoroughly coated. Refrigerate until ready for service.
