Mixed Bean Chili


Ingredients:

  • 2 Tbsp. olive oil

  • 1 cup onions, diced

  • 1 Tbsp. garlic, chopped

  • 2 tsp. cumin

  • 2 tsp. chili powder

  • 2 16oz. cans diced tomatoes

  • 1 lb. browned ground beef or turkey, drained

  • 1 16oz. can cannellini beans

  • 1 16oz. can kidney beans

  • Salt and pepper, to taste

  • 2 Tbsp. fresh lime juice

Preparation:

  1. Heat olive oil in a pot over medium heat. Add the onions and garlic and cook for 5 minutes, stirring frequently.

  2. Add the cumin and chili powder to toast the spices, about 3 minutes.

  3. Add the tomatoes and bring to a simmer. Add the browned beef or turkey and return to a simmer. Fold in the beans and cook for 15 minutes. Season with salt and pepper. Finish with the lime juice

Serves 4 to 6.
