Mixed Bean Chili

Ingredients:
2 Tbsp. olive oil
1 cup onions, diced
1 Tbsp. garlic, chopped
2 tsp. cumin
2 tsp. chili powder
2 16oz. cans diced tomatoes
1 lb. browned ground beef or turkey, drained
1 16oz. can cannellini beans
1 16oz. can kidney beans
Salt and pepper, to taste
2 Tbsp. fresh lime juice
Preparation:
Heat olive oil in a pot over medium heat. Add the onions and garlic and cook for 5 minutes, stirring frequently.
Add the cumin and chili powder to toast the spices, about 3 minutes.
Add the tomatoes and bring to a simmer. Add the browned beef or turkey and return to a simmer. Fold in the beans and cook for 15 minutes. Season with salt and pepper. Finish with the lime juice
Serves 4 to 6.
