National Nutrition Month is Here!

National Nutrition Month® is a nutrition education and information campaign created annually in March by the American Dietetic Association. The campaign focuses attention on the importance of making informed food choices and developing sound eating and physical activity habits.

National Nutrition Month® (NNM) was actually initiated in March of 1973 as a week-long event. In 1980, it began to run throughout the entire month of March due to a growing public interest in nutrition.

This March, the theme is Eat Right with Color and the American Dietetic Association suggested that nutrition professionals as well as bloggers write about what “Eat Right with Color” means to them.

So here goes…

To me, Eat Right with Color means consuming a variety of foods that consist of different colors to get the nutrients we need. (I mean, check out the NNM logo of all the different foods and colors, right?!) But that sounds incredibly boring and oversimplified, doesn’t it?

Hmmm…delving a little further into Eat Right with Color… I tend to think of all the rich, beautiful hues of fruits, vegetables, grains, herbs and spices, especially different varieties of certain items, such as purple carrots or golden beets, knowing that the richer the color, (ahem, NATURAL color), the more packed with vitamins, minerals and other nutrients the food is likely to be.

In fact, those deep colors indicate a high level of “phytonutrients,” which are disease-fighting substances. These mysteriously wonderful chemicals can only be consumed through food for their combined protective effects (scientists are just beginning to delve into these mechanisms), so supplements can’t cut it compared to food on this one.

I suppose when it comes down to it, to eat right with color means eating fresh food straight from the garden — and combining all those colors and flavors into an array of exciting dishes that look unbelievably appealing on the plate and taste fantastic.
